ENG: “IF you can’t beat them- eat them” is a new cookbook published by the Ministry of the Environment to draw attention to invasive species in the Danish nature and thus create interest and curiosity for the species that threaten other species. The cookbook shows how you can use local ingredients the wild for sustainable food and hopefully the book contributes to an increased focus on invasive species and their detrimental impact on native biodiversity.
